Ingredients
- 1/2 lb (225 grams) pasta (any shape)
- 3/4 cup (160 grams) cream cheese
- 1/4 cup (30 grams) grated parmesan cheese
- 1 tablespoon olive oil
- 1–2 garlic cloves, minced
- 1/2 cup (120 ml) pasta cooking water
- Salt and pepper, to taste
- Optional: 1/4–1/2 teaspoon chili flakes
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve about 1 cup of pasta cooking water before draining.
- In a skillet over low heat, warm olive oil and sauté minced garlic (and chili flakes if using) for 2-3 minutes until fragrant.
- Add cream cheese and reserved pasta water to the skillet, stirring until combined into a creamy sauce. Mix in parmesan cheese until smooth.
- Drain the cooked pasta and add it to the skillet, tossing well to coat with the sauce. Adjust consistency with more reserved pasta water if needed.
- Serve immediately with a drizzle of olive oil and extra parmesan on top.
