  • ¾ cup sliced almonds
  • 2 cups all-purpose flour
  • ¼ + ⅛ teaspoon salt
  • 1 cup unsalted butter
  • 1½ cups powdered sugar (divided)
  • 1½ teaspoons vanilla extract
  • 1 cup mini chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grind sliced almonds in a food processor until finely chopped; set aside.
  3. Whisk together flour and salt in a medium bowl; set aside.
  4. In a stand mixer, cream butter and ½ cup of powdered sugar until just blended.
  5. Mix in vanilla extract until combined.
  6. Gradually add flour mixture on low speed until just combined; fold in chocolate chips and ground almonds.
  7. Scoop dough into tablespoon-sized balls and place on an ungreased cookie sheet.
  8. Bake for 10–12 minutes or until bottoms are lightly golden brown.
  9. Roll warm cookies in 1 cup of powdered sugar, then transfer to wire racks to cool completely.
  10. Once cooled, roll cookies again in powdered sugar for an extra sugary coating.
