  • 1 medium onion, finely diced
  • 1 medium carrot, finely diced
  • 2 celery stalks, finely diced
  • 2 large garlic cloves, finely chopped
  • 1 lb lean ground beef
  • ½ cup dry red wine
  • 2 tablespoons tomato paste
  • 2 cans crushed tomatoes
  • lb gnocchi
  • Grated Parmesan and fresh basil for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat. Sauté onion, carrot, and celery for about 8–10 minutes until softened.
  2. Add garlic and cook for another minute before stirring in the ground beef. Cook until browned (about 5–6 minutes).
  3. Pour in red wine and let it simmer for 1–2 minutes.
  4. Mix in tomato paste and herbs; add crushed tomatoes and beef stock. Bring to a boil, then reduce heat and simmer uncovered for about 15 minutes.
  5. Meanwhile, cook gnocchi according to package instructions; drain once done.
  6. Once the sauce thickens, remove bay leaves and stir in cooked gnocchi along with Parmesan cheese and fresh basil.
