  • 5 ancho peppers
  • 5 guajillo peppers
  • 23 chiles de árbol (optional)
  • 1 tablespoon olive oil
  • 1 large white onion, chopped
  • 3 large tomatoes, chopped
  • 5 cloves garlic, chopped
  • 1 tablespoon dried Mexican oregano
  • 1 tablespoon sea salt, or to taste
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon black pepper
  • ½ cup apple cider vinegar
  • 2 large roasted tomatoes, chopped
  • 4 cups beef stock, divided
  • 3.5 pounds lamb shoulder, or substitute beef shank or chuck roast
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare the chilies by toasting them in a pan until their skins darken slightly. Soak them in hot water for 20 minutes.
  2. Cook chopped onion and tomatoes in olive oil until softened. Add garlic and cook for another minute.
  3. Blend the cooked vegetables with soaked chilies and spices until smooth.
  4. Marinate the meat in the sauce for at least 2 hours (overnight is best).
  5. Cook marinated meat with sauce and beef stock in a large pot for about 3 hours until fork-tender.
  6. Serve as a soup or shred for tacos.
