  • 100g / 3.5 oz pretzels
  • 35g / 1/4 cup plain flour
  • 2 eggs, beaten
  • 5 tbsp full-fat mayonnaise
  • 3 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp classic yellow mustard
  • 1 tsp apple cider vinegar
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • 2 tsp paprika
  • 3/4 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp oregano
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 180ml / 3/4 cup vegetable oil (or as needed)
  • Flaky sea salt, to serve
  • Finely diced fresh chives, to serve
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare the honey mustard sauce by mixing mayonnaise, honey, Dijon mustard, apple cider vinegar, onion powder, and garlic powder in a bowl; adjust to taste.
  2. Crush pretzels in a food processor or plastic bag until coarsely crumbed.
  3. Set up dredging stations with flour mixed with half the spice blend, beaten eggs, and crushed pretzels mixed with the remaining spices.
  4. Slice chicken breasts into cutlets and dredge each piece first in flour, then egg, and finally coat well with pretzel crumbs.
  5. Heat vegetable oil in a frying pan over medium heat until hot.
  6. Fry cutlets until golden brown on both sides; transfer to a wire rack to drain excess oil.
  7. Serve hot with honey mustard sauce drizzled or on the side.
