  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 3 garlic cloves, minced
  • 1 tablespoon all-purpose flour
  • 1 ¼ cups heavy cream
  • Juice and zest of 1 lemon
  • 2 tablespoons chopped fresh dill
  • Kosher salt and freshly ground black pepper

Instructions

  1. Pat the salmon fillets dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat; sear salmon skin-side up for about 5 minutes until golden brown. Flip and cook skin-side down for another 5 minutes until crispy. Remove and set aside.
  3. In the same skillet on medium-low heat, melt butter, sauté minced garlic until fragrant (30 seconds). Stir in flour to form a roux and cook for an additional minute.
  4. Gradually whisk in heavy cream; cook until slightly thickened (3-4 minutes).
  5. Add lemon juice, zest, and dill; adjust seasoning as needed.
  6. Return salmon to the skillet, spoon sauce over each fillet, and simmer gently for about 2 minutes.
  7. Serve hot, garnished with optional crushed red pepper flakes.
