  • 1 lb sausage (your choice), sliced
  • 4 medium potatoes, peeled and cubed
  • 1 cup asparagus, trimmed and cut
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup chicken or vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, heat 1 tablespoon olive oil over medium heat. Sear sausage until browned; set aside.
  3. Add remaining olive oil to the skillet and sauté potatoes for about 8–10 minutes until lightly browned.
  4. Stir in onion and garlic; cook for another 3–4 minutes until onion is translucent.
  5. In the greased baking dish, layer potatoes, onions, garlic, asparagus, seasoning with thyme, salt, and pepper. Pour broth over the top and add sausage slices.
  6. Cover with foil and bake for 40–45 minutes until potatoes are tender.
  7. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until cheese is melted.
