Ingredients

For the Chicken:

  • 20 oz 1¼ lbs boneless, skinless chicken breasts
  • 2 tbsp all-purpose flour
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp sweet paprika
  • ½ tsp salt
  • Freshly ground black pepper to taste

For Cooking:

  • 1 tbsp olive oil
  • 3 tbsp unsalted butter divided
  • 3 garlic cloves minced
  • 2 tbsp fresh parsley chopped

Instructions

Prepare the Chicken

  • Pat the chicken breasts dry with a paper towel and cut them into 1-inch pieces.
  • In a bowl, combine the flour, oregano, basil, paprika, salt, and black pepper. Toss the chicken pieces in the mixture until evenly coated.

Cook the Chicken

  • Heat a large skillet (preferably cast iron) over medium-high heat.
  • Add 1 tbsp olive oil and 1 tbsp butter to the skillet.
  • Once the oil is hot and the butter has melted, add the chicken in a single layer.
  • Let the chicken cook undisturbed for about 3 minutes to develop a golden crust.
  • Flip the pieces and cook for another 2 minutes until lightly browned.

Add the Garlic Butter Flavor

  • Add the remaining 2 tbsp butter, minced garlic, and chopped parsley to the skillet.
  • Cook for 1 minute, stirring occasionally, until the garlic is fragrant and the chicken is fully cooked (internal temperature reaches 165°F/74°C).

Serve

  • Serve hot as a main dish with rice, pasta, or a fresh salad, or enjoy as an appetizer.
