Ingredients

  • 4 skinless boneless chicken breasts (about 1½ lb)
  • 1 teaspoon Italian seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Sea salt and pepper to taste
  • 12 asparagus stalks ends trimmed
  • 1 ounce sun-dried tomatoes chopped
  • 4 slices mozzarella cheese
  • 1 tablespoon olive oil

Instructions

Preheat the oven to 400°F (200°C).

  • Place the chicken breasts on a cutting board and sprinkle both sides with Italian seasoning, garlic powder, smoked paprika, sea salt, and pepper.
  • Using a sharp knife, cut a pocket lengthwise into each chicken breast, being careful not to slice all the way through.

Trim and wash the asparagus stalks.

  • Lay 3 asparagus stalks and a few pieces of chopped sun-dried tomatoes on each slice of mozzarella cheese, then roll up the cheese slice to hold the filling together.
  • Stuff each chicken breast with the mozzarella-asparagus-tomato roll. Secure the openings with toothpicks to keep the filling inside.
  • Heat the olive oil in a large cast-iron skillet over medium-high heat. Add the stuffed chicken breasts and sear for 3-5 minutes per side, until golden brown.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Remove the toothpicks before serving. Enjoy!

Notes

Cheese Substitute: Swap mozzarella for provolone or your favorite melty cheese.
Vegetable Swap: You can substitute asparagus with broccoli, spinach, or bell peppers for variety.
Oil Options: Avocado oil or grapeseed oil also work well for searing.
