Ingredients

For the Meatballs:

  • 1 pound ground beef
  • 1 pound ground pork
  • 1 large egg
  • 1 cup ricotta cheese
  • cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

For the Coating:

  • 1 cup pork rind crumbs

For the Sauce:

  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 ½ teaspoons minced garlic
  • Salt and pepper to taste
  • Optional: ¼ teaspoon paprika
  • Optional: Fresh basil for garnish

Instructions

Preheat the Oven

  • Set your oven to 400°F (200°C).
  • Grease a 10×13-inch baking dish with butter.

Prepare the Meatballs

  • In a large bowl, combine ground beef, ground pork, egg, ricotta cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  • Mix thoroughly until well combined.
  • Shape the mixture into small, even-sized meatballs.

Coat the Meatballs

  • Roll each meatball in pork rind crumbs, ensuring an even coating.
  • Place the coated meatballs into the prepared baking dish.

Bake the Meatballs

  • Bake for 20 minutes, or until the meatballs are browned.
  • Remove from the oven and set aside.

Make the Sauce

  • In a skillet over medium heat, melt the butter.
  • Add the minced garlic and sauté until fragrant.

Simmer the Sauce

  • Pour in the heavy cream and season with salt, pepper, and paprika (if using).
  • Let the sauce simmer until it thickens, then stir in the grated Parmesan cheese.

Combine & Serve

  • Add the baked meatballs to the skillet and gently toss them in the sauce until well coated.
  • Garnish with fresh basil if desired and enjoy!

Notes

For extra flavor: Add a pinch of red pepper flakes or a splash of Worcestershire sauce to the sauce.
