Ingredients

For the Meatballs:

  • 2 pounds ground turkey
  • 1 cup pork rind crumbs
  • 1 large egg
  • 1 cup ricotta cheese
  • cup grated Parmesan cheese

Optional: 1 teaspoon garlic powder

Optional: 1 teaspoon Italian seasoning

  • Salt to taste
  • Pepper to taste

For the Sauce:

  • 1 cup heavy whipping cream
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 ½ teaspoons minced garlic
  • Salt to taste
  • Pepper to taste

Optional: Fresh basil for garnish

Instructions

Preheat the Oven

  • Set the oven to 400°F (200°C).
  • Grease a 10×13-inch baking dish with melted butter.
  • Prepare the Meatballs
  • In a large bowl, mix ground turkey, pork rind crumbs, egg, ricotta cheese, Parmesan cheese, garlic powder (if using), Italian seasoning (if using), salt, and pepper.
  • Mix until well combined.

Shape and Bake

  • Form the mixture into evenly sized meatballs and place them in the prepared baking dish.
  • Bake for 20 minutes, until browned.
  • Remove from the oven and set aside.

Make the Sauce

  • In a skillet over medium heat, melt the butter.
  • Add the minced garlic and sauté until fragrant.
  • Pour in the heavy cream, season with salt and pepper, and let it simmer until thickened.
  • Stir in the grated Parmesan cheese and basil (if using).

Combine and Serve

  • Add the baked meatballs to the skillet and gently toss them in the sauce until fully coated.
  • Enjoy immediately, garnished with fresh basil if desired.

Notes

For a 100% strict carnivore version, omit the garlic powder and Italian seasoning.
Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheat gently on the stovetop or in the microwave.
