For the Casserole:
- 1.5 pounds ground beef
- 1 yellow onion finely diced
- 4 pounds russet potatoes peeled and sliced into ¼-inch pieces
- 2 cups grated cheddar cheese
- Kosher salt to taste
- Freshly ground black pepper to taste
For the Sauce:
- 1 10.75-ounce can condensed cheddar soup
- 1 12-ounce can evaporated milk
- ½ cup milk
- ½ teaspoon garlic powder
Prepare the Oven and Baking Dish
Assemble the Casserole
In the prepared baking dish, layer the sliced potatoes evenly. Season with salt and pepper.
Add ¼ of the cooked beef mixture, followed by ¼ of the grated cheddar cheese.
Repeat this process three more times to evenly distribute ingredients.
Prepare the Sauce
In a small bowl, whisk together the condensed cheddar soup, evaporated milk, milk, and garlic powder until smooth.
Bake the Casserole
Pour the prepared sauce evenly over the layered ingredients.
Cover tightly with aluminum foil and bake for 60 minutes.
Remove the foil and continue baking for an additional 15 minutes, or until the top is golden brown and the sauce is bubbling.
For extra flavor, add a teaspoon of Worcestershire sauce to the ground beef while cooking.
Swap cheddar cheese for a blend of Monterey Jack or Colby for a different cheesy flavor.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
