- 1 pound 454 g ground beef
- 1 small yellow onion diced
- 2 tablespoons 37 g taco seasoning (1 package)
- 16 ounces 454 g can refried beans
- 16 ounces 454 g bag frozen tater tots
- 14.5 ounces 411 g can petite diced tomatoes, drained
- 8 ounces 226 g sharp cheddar cheese, shredded
- Optional toppings:
- Shredded lettuce
- Black olives
- Tortilla chips
- Sour cream
- Salsa
- Diced Roma tomato
Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick cooking spray and set aside.
Heat a large skillet over medium heat. Add the ground beef and diced onion. Cook until the beef is browned and the onions are translucent. Drain excess fat if necessary.
Reduce the heat to low, then stir in the taco seasoning and drained diced tomatoes. Simmer for 5 minutes.
Spread the refried beans evenly on the bottom of the prepared baking dish.
Arrange the frozen tater tots in a single layer over the beans.
Spread the beef mixture evenly on top of the tater tots.
Sprinkle the shredded cheddar cheese over the beef mixture.
Cover and bake for 20 minutes. Then, uncover and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Top with your desired toppings and serve immediately.
