Cuisine: American
Servings: 4
- ¼ cup ghee or butter divided
- 1 tablespoon olive oil
- 1 lb Yukon gold potatoes cut into ½-inch cubes
- 3 garlic cloves minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon sea salt plus more to taste
- ¼ teaspoon ground black pepper plus more to taste
- 1 ¼ lb sirloin steak cut into ½-inch cubes
- Fresh parsley chopped (for garnish)
Cook the Potatoes
Once the ghee has melted, add the potatoes to the skillet.
Sprinkle with garlic, thyme, oregano, salt, and pepper.
Cook for 2-3 minutes before stirring. Continue cooking, stirring every 1-2 minutes, until the potatoes are golden brown and fork-tender (about 8-10 minutes).
Note: If the potatoes are crowded or cut into larger pieces, they may take longer to cook.
Remove the potatoes and any browned bits from the pan and set aside.
Sear the Steak
Increase heat to medium-high and add the remaining 2 tablespoons of ghee to the pan.
Once melted, add the steak pieces and season with a dash of salt and pepper.
Let the steak cook undisturbed for at least 2 minutes to achieve a good sear.
Stir the steak pieces and cook for an additional 1-2 minutes until golden brown.
Combine & Serve
Add the cooked potatoes back to the skillet and stir everything to combine.
Adjust seasoning with additional salt and pepper, if needed.
Garnish with freshly chopped parsley and serve immediately.
Potato Substitutes: Use red potatoes or fingerling potatoes for variety.
Uniform Cooking: Cut potatoes into small, even pieces for faster, even cooking.
Steak Searing Tip: Avoid stirring too early—letting it sit undisturbed creates a flavorful crust.
