Ingredients

For the Dressing:

  • 2 teaspoons orange zest
  • 2 tablespoons fresh orange juice

  • Chili flakes to taste

Instructions

Prepare and Toast the Nuts

  • Preheat oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.
  • In a bowl, toss the walnuts and pumpkin seeds with honey (or maple syrup), chipotle powder, and a pinch of salt.
  • Spread the mixture evenly on the baking sheet.
  • Bake for 15 minutes, stirring once halfway through, until golden and fragrant.
  • Remove from the oven, spread nuts in a single layer, and sprinkle with flaky salt. Let cool completely.

Assemble the Salad

  • In a large salad bowl, combine the mixed greens and frisée.
  • Add the diced apple or pear, sliced avocados, and pomegranate seeds.
  • Sprinkle the cooled nuts and crumbled cheese evenly over the top.
  • Gently toss to combine.

Make the Dressing

  • In a glass jar, combine the olive oil, balsamic (or apple cider) vinegar, Dijon mustard, honey, fig jam, orange zest, and orange juice.
  • Season with salt, black pepper, and chili flakes.
