Ingredients

  • 2 Tbsp unsalted butter 28 g
  • 4 cloves garlic minced
  • ½ tsp each salt oregano, crushed red pepper flakes
  • ¼ tsp ground black pepper
  • ½ cup sun-dried tomatoes roughly chopped
  • 1 cup vegetable broth 236 mL
  • 2 cans 15 oz each chickpeas, drained (425 g each)
  • 1 cup heavy cream or substitute half-and-half for a lighter version
  • ½ cup grated parmesan
  • 2 Tbsp chopped fresh basil

Instructions

Prepare the Flavor Base

  • Heat the butter in a large sauté pan over medium heat.
  • Add the minced garlic, salt, oregano, crushed red pepper flakes, and black pepper.
  • Cook for about 2 minutes, stirring frequently, until fragrant.

Add the Chickpeas and Tomatoes

  • Stir in the sun-dried tomatoes, vegetable broth, and chickpeas.
  • Let the mixture cook uncovered for 5 minutes on medium heat, allowing the flavors to meld together.

Finish the Dish

  • Remove the pan from heat.
  • Stir in the heavy cream, grated parmesan, and fresh basil.
  • Mix until everything is well combined and creamy.
